Healthy Salad: Tofu Salsa Verde with Hearts of Romaine

We love Caesar Salad, but we don't love the high calorie dressing that is often used. Cooking Channel’s show Extra Virgin stars Debi Mazar and Gabriele Corcos have partnered with House Foods Tofu to create delicious lower-calorie, high-protein salads that are great tasting and healthy, too. Their light and healthy Tofu Salsa Verde with Hearts of Romaine salad combines the flavors of a Caesar - capers, anchovies and lemon juice - with tofu to create a creamy, delicious dressing.

Tofu Salsa Verde with Hearts of Romaine
Serves 6

1/2 (14 ounce) package House Foods Organic or Premium Soft (silken) Tofu
1/3 cup Parsley leaves, roughly chopped
2 tablespoons capers (packed in vinegar)
2 oil packed anchovies
1 clove garlic, peeled
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
3 hearts of romaine, chopped
 
Add Tofu, parsley, capers, anchovies, garlic, and lemon juice to a food processor and blend until smooth. Add romaine to a large bowl and toss with salsa verde. Leftover dressing can be kept refrigerated in a covered container for 2 days.

Note: To make this vegetarian, leave out the anchovy and replace with another 2 teaspoons capers.
