Seasonal Eating: Homemade Marinated Artichoke Hearts

Take advantage of artichoke season and make your own marinated artichoke hearts.  This versatile dish can be used in a hundred ways in the kitchen.  Toss the artichoke hearts with pasta, puree them to make a sauce or dip, add them to a sandwich, or eat the hearts on their own as part of an antipasto platter.

Marinated Artichoke Hearts


400 gr. fresh artichoke hearts, steamed
2 tablespoons wine vinegar
6 tablespoons virgin olive oil
2 cloves of garlic, minced
3 tablespoons of chopped parsley
freshly ground black and red pepper


Mix oil, vinegar, garlic and parsley.

Add artichokes.

Season with salt and pepper.

Stir,cover and refrigerate for 12-24 hours.

Better on the second day.
