Dynamite Roasted Tomatillo Salsa

Roasted tomatillo salsa is great on just about anything.  Tomatillos are roasted in the oven before being blended with chiles, cilantro, garlic, and lime.  Ideally, you'll want a food processor or blender to make this recipe. You can find tomatillos (they look like a green tomato) in most supermarkets but if you can't find them, check your local Latin market. Pour your tomatillo salsa over your tacos, a piece of grilled steak, mix it with your eggs for breakfast or enjoy it the traditional way with chips.
 
 
Ingredients:
 
1 pound tomatillos (about 15), husked, rinsed, and roughly chopped
3 serrano chiles, with seeds
3/4 cup fresh cilantro leaves (1 bunch)
2 tablespoons fresh lime juice
1 tablespoon garlic, minced
1 teaspoon sugar
1 teaspoon salt
 
Directions:
 
Place all ingredients in a food processor or blender and puree.
 
An all-purpose salsa verde; especially good with tortilla chips, most seafood, and eggs.
 
Yield: About 2 cups.

As a Mexican food lover, I have always enjoyed cooking <a href="http://www.caferio.com">traditional Mexican food</a> and love when I find great new recipes to try.
