Quick and Easy Grilled Vegetable Pizza

This quick and easy version of grilled pizza let's you enjoy your favorite food all summer long.  A premade pizza crust is placed on the grill with sauce and toppings to be cooked to perfection.  You can use an array of fresh garden vegetables for this dish including thinly sliced eggplant, zucchini, juicy tomatoes, and fresh herbs.  If you have a little more time on your hands, you can make the pizza crust yourself and actually bake it on top of the grill.

Grilled Vegetable Pizza

Ingredients:

1 10 oz. prebaked thin crust Italian pizza crust
1 teaspoon dried Italian seasoning
2 plum tomatoes, chopped
1 1/4 cups sliced fresh mushrooms
1/2 cup shredded mozzarella cheese
Summer vegetables
 
Directions:
 
Heat grill. Cut sheet of heavy duty foil slightly larger than pizza crust. Spray well with nonstick spray. Place crust on foil. Spread sauce over crust, then sprinkle with seasoning and add toppings.
 
Place foil with pizza on grill over medium heat; cover grill. Cook 10-12 minutes or until cheese is melted.
 
Try using your own favorite toppings.
