These bomb Bailey's shamrock cookies from Buttercream Blondie are awesome. Alcohol and St. Patrick's Day go hand in hand but instead of a shot or a beer, how about a cookie? The shamrock cookies are made from a simple sugar cookie dough that is accented with Bailey's Irish liqueur. Once baked, they are sandwiched with a Bailey's cream filling made with instant espresso powder, powdered sugar and butter (Irish coffee ring any bells?). If these cookies weren't decadent enough, they are dipped into dark chocolate and topped with green and white sprinkles. Bailey's shamrock cookies are a festive treat to celebrate this Irish holiday.
Shamrock Cookies
2 sticks unsalted butter, room temp
1&1/2 cups sugar
1 egg
1 egg yolk
1 t. vanilla extract
4 cups AP flour
1 T. baking powder
1/2 t. salt
1/2 cup Baileys
Baileys Cream Filling
2 sticks unsalted butter, room temp
2 & 1/2 cups powdered sugar
6 T. Baileys
2 t. Trablit - you can also use instant espresso powder
