Frito pie is a must-have snack for Super Bowl Sunday. There is some debate as to where the Frito pie came from but there are two schools of thought: New Mexico or Texas. Frito chips are smothered in chili, cheese and various toppings and then bake until hot and the cheese is melted. Unlike nachos, the chips stay firm and crisp. Frito Pie will soon become a Super Bowl favorite.
3 cups Frito Chips
2 1/2 cups Beef Chili
3/4 cup onion, chopped
1 Cup Cheddar Cheese, Grated
Place 2 cups of corn chips in a baking dish. Sprinkle half the onion and half the cheese over the chips. Pour the chili over the onion and cheese. Sprinkle the remaining chips, onion and cheese over the chili.
Bake for 15 or 20 minutes until the cheese is fully melted. Serve hot. Top with diced tomatoes, sour cream and jalapenos.
