Vegan nachos are a delicious game day snack. Freshly fried tortillas are stacked with pinto beans, salsa, and roasted red peppers. If you are being really indulgent, add a nice dollop of homemade guacamole. Some spicy soy chorizo would also be a tasty touch. Vegan nachos are sure to please on Super Bowl Sunday.
12 Corn tortillas -- cut into quarters
1 cup Pinto beans -- cooked
1 cup Salsa
1 cup Red peppers --Minced
1 cup Nutritional yeast "cheese"
Place tortilla pieces on a baking sheet and bake at 400 degrees until crisp but not brown, about 5 minutes.
Coarsely mash the beans. Spread the beans on the tortillas and return the wedges to the baking sheet. Dot each with the salsa. Sprinkle with the peppers and dribble the "cheese" sauce on top.. Bake about 3 minutes. Serve warm
