Gluten Free Hurricane Pancakes

Those of us who live in the big apple, are prepping for Hurricane Irene to come whipping through town. What this actually means is that it's the perfect opportunity to enjoy fine food and drink with family and friends.

There was just one issue, In the hustle and bustle of making it to the subway before the mass transit shut down, I forgot a few key ingredients for my nutrient dense gluten free pancakes.

Since I promised pancakes, I had to adapt with what I had on hand, and it turned out to be the best my best "oops" foodie moment yet. These delectable pancakes may just be my new favorite.

These are no ordinary pancakes, they are oh-so nourishing and beyond delicious.

Nourishing Gluten Free Pancakes

1/2 cup brown rice flour
1/2 cup buckwheat flour
1 egg
1 cup filtered water
1/4 cup coconut oil
1/4 cup sunflower seeds
1/4 cup soaked almonds
ghee or coconut oil for cooking
 
Topping
1/2 cup berries
1 banana
filtered water to cover fruit
1 tsp Himalayan salt
1-2 tsp cinnamon
optional: cardamom
tahini
unsweetened shredded coconut
