This bold summer raspberry vinaigrette is full of flavor. The tart fruitness from the raspberries add a facet to the vinaigrette that you just cannot get from vinegar alone. This dressing goes with just any salad. Top your cobb salad with this vinaigrette for a hint of sweetness or toss it with simple green salad to livin' it up. Raspberries are at their peak now and should be take advantage of. After all, the season is short lived.
Ingredients:
1 cup raspberries
2 tablespoons freshly squeezed lemon juice
2 tablespoons raspberry or red-wine vinegar
1 teaspoon sugar
6 tablespoons olive oil
Freshly ground pepper
