The key to perfect tortillas is the texture of the dough. You want to make a smooth and moist dough whose edges don't crack when rolled. Freshly made tortillas will convert any common meal into the realm of the spectacular.

2 cups masa harina
1 teaspoon salt
1 ¼ cups hot water plus 2 to 3 tablespoons
1teaspoon lard
