Vegetarian Thanksgiving Loaf

Are you wondering what to serve vegetarian guests on Thanksgiving? Put the tofurky back in the freezer: Vegetarian Loaf is a quick alternative to fake poultry.

While there are many meatless holiday loaf recipes out there, this one is great because it is soy-free and easy. No boiled rice, no TVP, no laundry list of ingredients.  Canned garbanzo beans, pre-chopped walnuts and boxed breadcrumbs make it a snap to whip up: 20 minutes of prep work and 30 minutes in the oven. Wham, bam, thank you ma'am.

Despite the simplicity, the addition of onions, carrots, celery, sage and parsley makes the loaf very flavorful. To enhance presentation, bake in mini loaf tins for individual servings or press into a nice mould and invert onto a tray. Serve with veggie gravy and all the trimmings.
