Technique: Deveining

Deveining is the process of removing veins from meat.
This technique is often used to prep shrimp for cooking. To devein a shrimp, cut a slit along the outer ridge of the shrimp to expose the vein. Loop a toothpick underneath the vein and lift it out.
I find that the easiest way to do this is under cold, running water.
