Robiola

About
An Italian whole cows' milk or goats' milk cheese, sometimes mixed. It comes from the Stracchino family. It comes in a cylindrical shape with a diameter of 16 cm. Robiola comes from Northern Italy. The fresh version has no rind and is soft, ranging from white to pale yellow in color. The taste is described as sweet. More aged versions have a thin, pinkish rind with a layer of green mold. This kind is has a piquant flavor and tastes more fatty. It is served with olive oil and pepper or which a green sauce with parsely, garlic, bread, pureed tomato, and anchovies.
