With all the beautiful raspberries we’ve picked the past month, I decided to take my favorite cold sweet tea to a new level of delicious. I made Raspberry Iced Tea. And it’s absolutely heavenly.

Using soil-mapping study findings, we grafted two under-performing Cabernet Sauvignon vineyard blocks and one Merlot block over to Malbec and Petit Verdot. The transformation of the vineyards over the last 16 months is really amazing.

Ginger beer is often carbonated, and made with yeast, but this version skips that step. I still like the bubbles, so I simply use seltzer (carbonated) water to dilute the concentrate to taste. It's always fun when folks shake their heads and say with awe: "You made this from scratch?"
