Curried Lamb and Potatoes

Ingredients

MAINS: Cubed lamb chops bone in, approx 2 lbs. If you wish you can use boneless lamb

PREPARATION: Wash lamb thoroughly, cube potatoes into bite size pieces, peel and mince garlic, ginger and fresh chillies together, clean the cilantro separate the leaves from the steam

COOKING: In midsized pot heat oil over slow to medium heat .Once oil is hot, add onion, ginger, chilli and garlic paste. Cook till golden brown.

Add lamb, curry spices, salt and cook for about 10 minutes, add 2 cups of water. Cook for another 20 minutes. Taste the sauce, if you want to add any extra of the above ingredients please yourself.

Now lower the heat and let the lamb simmer with all the spices for another 45 minutes. At this time the lamb should be quite tender and juicy.

Add the potatoes and simmer for about 20 minutes. Now add your garnish, the cilantro leaves. Take off heat. Enjoy

Goes good with rice, roti, or simply on its own.

Dinner is served.
