Sugar-Free, Butterless Brownies!

Ingredients

6 tablespoons organic cocoa powder
1 extra large sweet potato, peeled, cubed, and steamed until tender (let cool 15 min)
1 1/2 teaspoons organic stevia extract
2 eggs or 1 large ripe banana
1/4 cup dark chocolate shavings or chips (this would make the recipe contain a small amo

Preheat oven to 350F. Spray a square 8×8 baking pan with non-stick cooking spray.

Combine cocoa powder and sweet potato in a bowl until blended. Stir in the stevia.

Beat one egg in at a time. Gently stir in flour, salt and vanilla.

Pour into baking pan, sprinkle with dark chocolate and bake 20-25 min until toothpick comes out clean.

After reading the title of these brownies you might not think that these would taste good. Bake without butter ? What? How is it possible? I will tell you my friends…it’s a secret I like to call the super potato! The most amazing potato in the world, the sweet potato! Yes, you read it right, I used a sweet potato as the butter in my recipe and the result? A chewy, moist, vitamin packed brownie! It is also sugar free because I used an ancient zero calorie, natural sweetener called stevia. Stevia has gotten a bad rap over the past few years (I personally believe this was fueled by the sugar industry), but is starting to make its debut in the U.S. For more info on stevia, check out http://www.stevia.net.
