Pineapple Rice Pudding By Shobhana Mishra
Ingredients
2 cups
of
whipped cream
2 cups
of crushed drained
pineapple
1/2 cup
of
long grain rice
1 cup
of
milk
3 tablespoons
of
sugar
1/4 tablespoon
of
almonds
Preparation

In a medium saucepan combine milk, rice, sugar.

Over medium
heat
boil it, once it starts to boil, lower the
heat
, cover
simmer
for 10-15 minutes until all the milk is absorbed and rice is
tender
.

Cool
it.

In a bowl combine rice,crushed pineapple,whipped
cream
and 2tbsp of almonds.

Garnish
with almonds.

Makes 6-8 servings. 230 cal.
