Fish Pie With Fresh and Smoked Salmon
The five second delay. You've heard of it regarding TV and radio broadcasting.... When the producers aren't certain the talking heads can keep a civil tongue, so they have a built-in broadcast delay and a kill switch if things get over the top. That's what it's like all the time for me speaking French. I got a haircut today. The conversation went something like this: She: How much should I cut off? Had we been discussing Descartes' Theory on the Existence of God I would have a valid excuse for the mental pause. As we were discussing a haircut it's a bit harder to justify. - 8 ounce fresh <a href="/3T3PQ3PT">salmon</a>
- 1 teaspoon <a href="/PCGHNLWF">lemon juice</a>

- 0.5 teaspoon <a href="/TPYNR762">black peppercorns</a>
- 4 ounce <a href="/5S8MBFQ2">smoked salmon,</a> either wet or dry smoked
- 8 ounce <a href="/36CYVR2Z">Savoy cabbage,</a> sliced
- 1 <a href="/YCPMHNRB">onion,</a> chopped
- 1 cup <a href="/ZYD5YGV2">chicken stock</a>
- 0.5 cup <a href="/Q67GD8BS">white wine</a>
- 1 teaspoon dried <a href="/M2B7FBHZ">tarragon</a>
- 1 teaspoon dried <a href="/GX2K3DBW">chives</a>
- 2 teaspoon <a href="/CT6LHSSZ">cornstarch </a>dissolved in 1 tbs <a href="/PXTR53Z5">water</a>
- 0.5 cup Greek or <a href="/JWML5PLS">plain yogurt</a>
- 1 tablespoon <a href="/NLPYVN22">olive oil</a>
Instructions
Step 1
<a href="/RSDQ7YW8">Peel </a>potatoes and <a href="/XZBDDD5G">cut </a>into chunks
Step 2
Cook in <a href="/W7VKDJHH">boiling,</a> <a href="/DPSVTKVY">salted </a>water until tender, app. 15 minutes
Step 3
Drain potatoes, add butter, horseradish and 2 tbs milk to potatoes, <a href="/LYM2NCDW">mash,</a> adding a bit more milk if needed
Step 4
Put fresh salmon in a medium <a href="/MYJ2HRB7">skillet,</a> add water to almost cover, lemon <a href="/QDWRNXYW">juice,</a> bay leaf and peppercorns. Cover and <a href="/SNDRKPSQ">poach </a>until done, 12 - 15 minutes. It should be opaque and flake easily with a fork.
Step 5
Remove salmon and <a href="/XZBDDD5G">cut </a>into large chunks

Roughly <a href="/6L7QNTJV">chop </a>the <a href="/QRT27MZS">smoked </a>salmon

Sauté onion in oil until tender

Add cabbage and sauté, <a href="/DRM2WPZ4">stirring </a>2 - 3 minutes.

Add white wine, chicken stock, herbs, cover and <a href="/GFSF4J5F">simmer </a>10 minutes

<a href="/PXKXVQTM">Dissolve </a>cornstarch in water and add to cabbage, <a href="/DRM2WPZ4">stirring </a>until <a href="/LXP6HLBF">thickened</a>

Remove from <a href="/XZFHRHHF">heat </a>and add yogurt and <a href="/DRM2WPZ4">stir </a>well to combine.
Step 12
Add both salmons to cabbage and <a href="/DRM2WPZ4">stir </a>gently.

<a href="/NX588QBK">Spoon </a>into a <a href="/RNT367Z2">baking </a><a href="/QQVZX64Y">dish</a>

<a href="/RNT367Z2">Bake,</a> 400F (200C) for 15 minutes or until the <a href="/R34ZSY3M">top </a>starts to <a href="/D434P8MH">brown.</a>
