Quick Pickled Daikon

Ingredients

1 large daikon, peeled and cut with a mandoline into very thin slices
1 tablespoon sugar
1 teaspoon kosher salt

Preparation

In a bowl, toss daikon with the sugar and salt until well coated

Let sit for 5-10 minutes

If daikon is too sweet or salty, place in a colander and rinse off the seasoning, then dry with a towel. Add more sugar or salt as needed. Serve after 5-10 minutes or refrigerate for up to 4 hours.
