Mother Rimmy's Version Of Huevos Rancheros

Ingredients
1/2 cup red onion, finely chopped
1/2 cup bell pepper, finely chopped
1 clove garlic, minced
1/2 cup black beans, drained
2 tablespoons low fat mozzarella cheese, shredded
2 tablespoons low fat sour cream
2 tablespoons cilantro, minced
2 mediums whole wheat tortillas
Preparation

Saute onion, garlic, and bell pepper over medium heat in non-stick saucepan sprayed with cooking spray until tender for 5 minutes. Add water as needed to keep from burning.

Add tomatoes and black beans and cook another 3 minutes to heat through.

Add eggs and stir until eggs are set.

Take one tortilla, top half with half the egg mixture and 1 tbs cheese.

I have no idea how to make authentic Huevos Rancheros, but for some reason, my idea of Huevos Rancheros seemed to fit the ingredients in my pantry tonight.
I searched my favorite blogs and found enough recipes to adapt one to fit the ingredients I had on hand, and went to work.
This adventure turned out to be over my 400 calorie limit for a meal. Still, at 500 calories, low in fat and high in fiber, it's a terrific choice for a quick dinner.
