This dish gets you out of the norm of the generic eggs and toast breakfast. The recipe is for 2 people and can be multiplied easily (you may not need to increase the amount of garlic). First mix your ricotta by adding a pinch of salt and pepper and olive oil. Then toast your bread. While the bread is toasting make your scrambled eggs. For soft (not rubbery) eggs, cook them slowly in the pan on low heat. To start, melt some butter in a small non-stick skillet.
