Easy Fresh Mango Salsa
Ingredients
1 fresh mango, peeled, cored and diced
          1/4 cup red onion, chopped
          2 tablespoons fresh cilantro, chopped
          Juice of one lime
          2 tablespoons olive oil
          1 teaspoon salt
          Fresh ground black pepper to taste
          1 jalapeƱo pepper, seeded and finely chopped

In a bowl, combine the above ingredients. If the mango is firm, mash the chopped pieces a bit with a fork.

This fresh salsa is excellent served on top of grilled fish, such as tuna, or in fish tacos.
