Cornmeal Bombocado
Ingredients
2 cups of sugar
3 whole eggs
1 cup of cornmeal
1 tablespoon of butter, plus for greasing {at room temperature}
2 cups of milk
2 tablespoon of baking soda
1/2 cup of grated parmesan cheese
3 tablespoon of all-purpose flour, plus for flouring
Preparation

Preheat oven to 400 F.

Grease a rounded cake pan {8″ diameter} with butter and flour it. Set aside.

Put eggs and sugar into a blender and mix until a cream is formed.

Then put the remaining ingredients into the blender and mix for three minutes.

Pour the batter into the rounded cake pan and bake for 50 minutes or until a skewer is inserted and come out clean.

About
Bombocado is a Brazilian sweet treat {yey, another Brazilian sweet!}. In most recipes this sweet is made with shredded coconut and a large amount of yolks. In this recipe {the one I’m sharing with you}, bombocado is made with cornmeal and grated parmesan cheese. This bombocado has a thinner layer with the texture of a cake and a larger creamy layer.
