Greek Lentils

Ingredients

Place lentils is pan and cover with water.

Boil for 10 minutes, drain and put aside.

Chop onions and carrots.

Heat olive oil in pan.

Place onions and carrots in pan and sautée for 5 minutes or until onions are transparent.

Place lentils, rosemary, oregano, and water in pan.

Mix, bring to boil, reduce heat and simmer covered for 10 minutes.

Add tomato paste, mix, bring to boil and simmer covered for 45 minutes or until lentils are tender.

Serve with greek yogurt and sprinkled red wine vinegar.
