Spicy Dates Rolls

Ingredients

1 Onion: (Finely Chopped)
1/2 teaspoon Ginger Garlic paste:
Salt: To Taste
Turmeric Powder: Pinch
1/4 teaspoon Garam Masala:
2 teaspoons Olive Oil:
1 Cabbage: Firm Leaf
1 Spinach: Firm Leaf (a 4- 5 baby spinach leaves)
1/2 Minced Green chill:

Preparation

First thing you do is wash the dates & keep them aside to dry, use paper towel to take excess moisture off.

In a pan stir fry your chopped onion til it turns golden brown ( i prefer to use red onions as they caramelize better), add seasoning of garam masala, salt, turmeric powder & tomatoes (again finely chopped), roast till the mixture becomes consistent. Take out this mixture in a bowl.

Take a nonstick pan, drizzle few drops of olive oil. Gently heat your Cabbage/Spinal leaves for few seconds, dont overheat, else they will become soggy & fall off, Take the leaves out spread them on a plate.

Layer the curried mixture on the leaves, throw in a 1 full date on to each curried leaf & roll it up, and heat the rolls for 30 seconds. The wonderful curried rolled dates are ready.

Serve with a herb tomato & Pudina Yogurt Dip !!!!!

About

Well the idea might sound like rolled dates in cabbage and spinach, but the TRUE inspiration here is "Stuffed Karela" (or Bitter Gourd), I had a few concepts in mind in what to roll in along with the dates but gave a caramelized onion filling a shot. You can also try jullien s of red and yellow bell peppers. So here's how it goes...
