Cajun Fettuccine Alfredo
Ingredients
Fettuccine noodles for 4
1/2 cup green onions (green part only), chopped
1/2 cup mushrooms, chopped
1/4 pimentos, chopped OR roasted red peppers
1 teaspoon minced garlic
1/2 cup chick stock OR broth
1 1/2 cups heavy cream
Preparation

Bring salted water to a boil and cook pasta. Meanwhile, in large skillet, combine stock, onions, garlic, mushrooms and pimentos over high heat until boiling. Add cream and continue on high heat until mixture is reduced by half. Lower heat, add pasta and mix well. Place on warmed serving plates. Pass around grated Parmesan cheese, crushed red peppers and crusty French bread.
