Pumpkin Nut Roll
Ingredients
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup chopped walnuts
1 cup powdered sugar
8 ounces cream cheese, softened
4 tablespoons butter, softened
1/2 teaspoon vanilla
Preparation

Beat eggs on high for 5 minutes. Gradually add sugar. Combine lemon juice and pumpkin, add to egg mixture. Sift together dry ingredients. Add to egg mixture. Pour into 10"x15" greased jelly roll pan. It may help to line the pan with parchment paper. Sprinkle nuts on top. Bake 15 to 20 minutes at 375 degrees.
