Ingredients

For the wrap
2 teaspoons Oil
Water
For the onion dressing
1 Onion cut to rings
Salt
1 teaspoon Chaat masala powder
For the cottage cheese garnish
1/2 teaspoon Black pepper
Salt
2 tablespoons Coriander
For the Pattice
4 Mashed Potatoes 4 (boil and mash)
1/2 cup a Green peas boiled
3 Green chillies finely chopped
1 teaspoon Garam masala
1 teaspoon Lemon juice
Salt
Cloves to lock the wraps

Preparation

For the wrap

Mix flour, oil , salt and water.

Knead a soft dough and set aside for an hour.

Divide into small portions and make a roti from each piece.

For the onion dressing

Mix all the powders as listed under the onion dressing ingrdnts

Add to onion and sprinkle lemon juice on it.

Leave it to marinate for 30-45 minutes.

For the cottage cheese garnish

Mix all the ingredients.

Let it sit for 15 minutes.

Masala will coat well on the cottage cheese.

Shallow fry it and set aside the fried pieces.

For the pattice

Mix all the ingredients and set aside for 10 minutes.

Divide to equal portions and make long pattice .

Shallow fry this and set aside.

To assemble the Frankie

Now take a wrap, place a pattice in the centre.

Chop the fried paneer pieces to long thinner pieces and arrange on the pattice length wise.

Now add on spicy onion rings.

Close the wrap and lock it with a clove stick.

My first bite of FRANKIE was at a small stall, on M.G. Road Bangalore. Enough to tell me this was something new. This is the age of fusion ..fusion in clothes, fusion in style of living, fusion in family and ofcourse fusion in food ...Frankie is a hot party item. You need to do some ground work to relish a frankie. few preps and you are ready to go !!

For the wrap - Maida roti
Take a cup of maida (plain flour) and mix in 2 tsp oil. Add some water and salt, make a dough. Add in more water as you need. Knead for abt 5-7 minutes and set aside for an hour. The dough will be softer now. Divide into small portions and make rotis. Maida will strech easily so make big rotis coz we are going to fold them.

For Onion dressing
Onion 1 cut to rings
Red chilli powder 1 tsp
Salt
Lemon juice 1 tbspn
Chaat masala powder 1 tsp
Mix all the powders. Add to onion and sprinkle lemon juice on it. Leave it to marinate for 30-45 minutes.

For paneer garnish (cottage cheese)
Paneer 1/2 a cup
Garlic 2 pods
Black pepper 1/2 tsp
Red chilli powder 1 tsp
Salt
Coriander 2 tbsp washed and chopped
Mix all the ingredients and sprinkle 1 tsp oil on paneer. Let it sit for 15 minutes. Masala will coat well on paneer. Shallow fry it and set aside the fried paneer masala.

For the pattice
Mashed Potatoes 4 (boil and mash)
Green peas 1/2 a cup (boil)
Green chilli 3 finely chopped
Garam masala 1 tsp
Lemon juice 1 tsp
Salt
Mix all the ingredients and set aside for 10 minutes. Divide to equal portions and make long pattice . Shallow fry this and set aside.

Before you put this together take a deep breath ..hee hee .You know this works for me.

Ok now take a wrap, place a pattice in the centre. Chop the fried paneer pieces to long thinner pieces and arrange on the pattice length wise. Now add on spicy onion rings. Close the wrap and lock it with a clove stick.
Frankie is ready ...enjoy before its gone !!
