Carrot Bread

Ingredients

1 1/2 cups whole wheat pastry flour
1/2 cup orange juice
1 1/2 cups shredded carrots
1 1/2 cups wheat germ
1 tablespoon cinnamon
1/2 cup chopped walnuts
1/2 teaspoon grated orange rind
1 tablespoon baking powder
2 eggs, beaten
1/4 cup corn oil
1/4 cup honey

Preparation

Combine dry ingredients in a large mixing bowl. In another bowl, beat the eggs with the remaining ingredients. Stir the egg mixture into the dry ingredients and place batter in a lightly oiled 8 1/2 x 4 1/2 inch bread pan.

Bake at 350 degrees for 50 or 60 minutes or until toothpick inserted into the bread comes out clean.
