College Minestrone

Ingredients
1 can of each:
favorite legume (bean)
sweet corn or potatoes
green beans or sweet peas
diced tomatoes
8 oz tomato sauce
Preparation

Drain and rinse 1st bean

Combine bean with others in decent size bowl

Simmer on stove for 13 minutes

OR microwave for 20 minutes

Now season with salt and pepper or whatever spices/herbs you fancy

this recipe was a favorite of my friends and me during college. one of my pals devised this it to not only serve many but store well and long. you will need to keep the cans standard size except for the sauce. this soup is cheaper than most, and can adapt to quite a few diet restraints (low-salt, organic, gluten-free, vegan, etc.). the best storage method is freezing in ziplock baggies. just remember: skip seasoning until ready to eat. best part: you can tweek this recipe any which way you like. just have fun, find what suits your tastes and needs, and always eat it with company.(fyi: this soup may not blend well with dairy; i haven't really tried it that way)
