Gaelic Steaks

Ingredients

4 tablespoons clarified butter
3 cloves garlic, minced
2 oz. mushrooms, sliced, may omit mushroms
6 ounces filets
3/4 cup heavy cream
(sea) salt to taste

Preparation

Coat steak filets in fresh ground (coarse) pepper, salt tt

Saute steaks in skillet with 1-2 tbsp. butter (or oil) til desired temp.

Remove & keep warm. In same pan, melt 2 tablespoons butter over medium heat. Saute shallots shortly then add the mushrooms and garlic.

Cook until carmelized.

Add whisky (carefully) and worcesershire sauce, stir.

May omit worcestershire)

Add half and half and reduce (thickened sauce).

Cover steaks with sauce and serve immediately.

Add parsley atop steaks for garnish if desired.

A little extra booze and heavy cream never hurt
