Middle Eastern Pesto

Ingredients

1/2 cup fresh parsley
1/4 cup lemon juice
1 teaspoon salt
1 teaspoon paprika
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
3 tablespoons olive oil

Preparation

In food processor or blender, blend parsley, fresh coriander and garlic until finely chopped. Blend in lemon juice, salt, paprika, cumin and cayenne. Add olive oil; process until incorporated. Taste; adjust seasoning if necessary.
