Peanut Butter Banana Boo Cups

Puree the banana with food processor/blender, mix with peanut butter in a medium bowl. Set aside.

If you have a double boiler use that to melt chocolate. Otherwise use a pan, put less than an inch of water in pan, and then put a metal bowl on pan, turn burner on medium heat. Place 1 cup of chocolate in metal bowl to melt down. You don’t want the water to boil in the pan, because if you heat the chocolate up to high, you can burn the chocolate.

Use a mini muffin pan, and mini muffin paper inserts. Once chocolate is melted, take a small amount and place in each cup, I used a knife and made sure to place a thin layer on sides with the chocolate, and small amount on bottom. Then take peanut butter/banana mixture and place in cups, put enough to where it is almost to the top of cup.

You will then melt the last cup of chocolate, and place on top of peanut butter/banana.

For extra crunch, you can mix crushed banana chips in with the peanut butter/banana mixture. Otherwise, once last layer of chocolate is on the cup, sprinkle the crushed banana chips on top.

Place in freezer until it sets up. Then enjoy!!

I entered this recipe in a challenge, and was top three finalist. I just decided to try something fun, I know everyone loves peanut butter cups. Why not add banana to the mix right?
