Herby Fried Potatoes

Ingredients

1 tablespoon olive oil
2 cloves garlic, minced
1 1/2 tablespoons thyme, minced

Preparation

Place potatoes in a microwaveable bowl with 2 inches of water. Microwave on high for 8 – 10 minutes, depending on the power of your microwave, until potatoes are crisp-tender.

Heat a large non-stick skillet with oil over medium heat. Add potatoes and cook for 8 – 10 minutes, stirring frequently to brown on all sides.

A few minutes before potatoes are done, add garlic, thyme, salt and pepper. Toss to combine herbs.
