Obviously, if it looks like a pancake, if it smells like an omelette and sounds like a soufflé, you are eating Fluffy French Omelette Souffle. Originally, this recipe was introduced by Madame Poulard who lived in France at the end of XIX and beginning of XX century. She was the owner of a small inn and restaurant in Normandy. Her Fluffy Foamy Omelette Souffle became very popular and turned into a tourist attraction on its own.
Certainly, its unbelievable fluffiness, lightness and sponginess will intrigue and surprise you like it amazed me the first time I saw it. No doubt, omelette is a frequently made meal in our kitchen but this one is a real miracle. By the way, we made a version with split yolks and whites. The original recipe doesn't split the eggs but we just love how gorgeous and fluffy an omelet becomes if you do it in an alternative way. Actually, we made it both ways but decided to present an updated and revised version. Hopefully you won't regret with Fluffy Foamy Omelette Souffle.
