Chicken Curry Filipino Style

Ingredients

1 kilogram chicken (approximately 12 pieces)
3 cloves garlic, minced
1 medium onion, minced
1 inch ginger, sliced
2 teaspoons iodized salt
1 1/2 cups water
2 tablespoons curry powder
2 inches medium potatoes, cut into 1 cubes
2 eggplant, sliced
1 inch small bundle string beans, cut into 2 long
1/4 kilogram coconut milk

Preparation

In a cooking pan saute garlic, onion and ginger. then add chicken and cooked for 3 minutes or until the meat is light brown in color.

Add salt then stir until it is completely dissolved.

Pour in water and curry powder. cover and bring to boil until chicken is completely cooked.

Then add the potatoes, simmer again until potato is tender then add the remaining vegetables.

Lastly, add the coconut milk, simmer for another two minutes.
