Cold Soba Noodles

Ingredients

9 oz. pkg soba noodles
1/4 c. unseasoned rice vinegar
2 T. soy sauce
1 T. toasted sesame oil
1 T. sugar
1 t. chile-garlic paste
1 clove of garlic, minced (I grated mine on a microplane)
1 t. grated fresh ginger
1 large carrot, peeled and shredded
2-3 green onions, thinly sliced
2 T. chopped fresh cilantro
1 T. sesame seeds, lightly toasted
3 hard-cooked eggs, halved
lime wedges, for serving

Preparation

Cook the soba noodles according to package directions (mine called for boiling for 4 minutes). Drain noodles and rinse well with cold water, until noodles feel cool to the touch. Drain well again, set aside in a large bowl while preparing the rest of the dish.

In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, chile-garlic paste, garlic and ginger. To the bowl with the noodles add the carrot, green onion, cilantro and sesame seeds. Add the dressing and toss to coat. Serve noodles garnished with the hard-cooked eggs and the lime wedges.
