Fish and Potato Soup

Ingredients

Serves 4
1 1/4 pounds monkfish fillet
1/4 cup butter
1/2 cup diced onion
2 crushed garlic cloves
2 1/4 pounds starchy (baking) potatoes, cut into ½ inch cubes
1 teaspoon Hungarian paprika
Salt and freshly ground white pepper
3 tablespoons flour
1 tablespoon oil
1/2 cup cream
1/2 cup milk
2 hard-boiled eggs, sliced
Coarsely ground pepper
Preparation

Rinse fish fillet briefly under cold water and pat dry. Cut into 1 inch cubes and refrigerate. Melt half of butter in a pot and saute onion until lightly browned. Add garlic and potatoes and continue sauteing over medium heat for about 15 minutes, stirring occasionally. Season with paprika, salt and pepper.

Season fish cubes with salt and dredge in flour. Heat oil and remaining butter in pan and saute fish cubes until light brown - about 3-4 minutes. Add 1 1/8 cups water to potatoes and onions and let simmer until small particles stuck to pan are dissolved. Pour in cream and milk, and bring to boil. Reduce heat and simmer 15-20 minutes. Adjust seasonings, and add sauteed fish cubes. Serve ga
