Potato Salad W/ Honey-Dill Dressing

Ingredients

2 pounds red potatoes, diced into 1 -inch cubes
1 cup chopped celery heart
salt and pepper, to taste
For dressing:
3 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons Greek yogurt
2 tablespoons Dijon mustard
1 teaspoon dill

Preparation

Bring a large pot of water to a boil; add salt.

Boil potatoes until fork tender, about 10-12 mins.

In a medium bowl, whisk together honey, vinegar, yogurt, Dijon, dill, salt and pepper until well incorporated.

Whisk in the extra-virgin olive oil.

Taste for seasoning and adjust if needed.

Drain potatoes and add scallion, celery and honey-dill vinaigrette.

Toss together until well incorporated; season with salt and pepper.
