Chermoula

Ingredients

12 garlic cloves, peeled
1 bunch big cilantro, stems and all
4 tablespoons cumin seeds, toasted and ground
6 tablespoons lemon juice and the grated zest
2 teaspoons salt
1 1/2 cups olive oil

Preparation

In a food processor, chop garlic.

Add everything but oil, blend.

Drizzle in oil until you have a pesto-like paste.

Use as a marinade or dressing for meats.
