Lamb Stir Fry

Thinly slice the bell peppers, carrots and chilli peppers.

Cut the onion into thick wedges

Separate the stems from the leaves.

Cut the stems into chunks and the leaves as well.

Thinly slice the garlic and ginger root.

Once the lamb is done add the ginger, garlic, chilli pepper, Bok Choy stems and the carrots.

Now add the red bell pepper and the Bok Choy leaves and soy sauce .Give it a good stir.

Take off stove and there you have it, nice fresh tasty lamb stir fry MMMM.

You may add any other vegetable of your choice to this tasty dish.

About
Growing up in the islands we had an abundance of fresh vegetables and fresh local meat. I miss that here where I am now.
Back home I could just go 10 minutes down the road and buy fresh chicken, goat or duck LOL.
The other meat that was readily available was lamb .Lamb is one of my favourite meats that I enjoy cooking and eating as well.
Today I was craving some lamb chop suey or we call it stir fry out here :) .I went down to the local supermarket and bought some lamb chops to prepare my lamb stir fry.
After picking up the lamb chops, on my way home I also stopped at the nice farm market where I picked up some fresh red peppers, Bok Choy, fresh ginger and fresh carrots.
Lamb stir fry was half way on to my hungry tummy mmm.
