Shepherd-Style Pork Pie


1 medium onion, chopped
4 medium carrots, chopped
2 t mustard seeds
4 ribs celery, chopped
1 lb ground pork
1/4 C dried currants
1/4 C walnuts, coursely chopped
2 T smoked paprika
1 t salt (or more to taste)
1 1/2 lbs potatoes
1/4 C butter
4 cloves garlic, minced
1 egg


Preheat oven to 350.
For pie top: Boil potatoes, drain, and mash with butter and garlic. Allow to cool somewhat. Lightly beat the egg and stir it into the mashed potatoes.
For pie filling: In a 10" cast iron pan, saute onions and carrots in a small amount of oil with mustard seeds. Add celery and pork, cook 5 min. Add paprika, currants, walnuts and salt. Remove from heat.
Spread potato mixture over the filling in the cast iron pan (or use a baking dish). Bake in 350 degree oven for 20-30 minutes until top is firm.


Salty, smoky & a little sweet, this pie is a perfect winter meal.
