Classic Sun Dried Tomato Pesto

Ingredients

Salt and freshly ground black pepper
1 cup (packed) fresh basil leaves
Salt and Pepper to taste

Preparation

Blend the sun-dried tomatoes and their oil, garlic, and basil in a food processor or blender until fairly smooth (the tomatoes should be finely chopped).

Transfer the tomato mixture to a large bowl.

Stir in the Parmesan.

Add salt and pepper as needed
