Crunchy and Colorful Broccoli and Bell Pepper Salad

Ingredients
4 cups broccoli florets, rough chopped
1 large red bell (capsicum) peppers, chopped
1/2 cup red onion, chopped
1/2 cup walnut pieces
1/4 cup parsley, minced
3/4 cup light mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
salt and pepper to taste
Preparation

Combine mayonnaise, vinegar and sugar in a small bowl.

Combine remaining ingredients with mayonnaise.

Refrigerate for 30 minutes before serving.

About
Healthy food can taste good without a lot of fuss. Broccoli salad is one of my favorite work day lunches. It’s easy to put together the night before, and I can add almost anything to it. A little light mayo, a few tablespoons of vinegar, and whatever veggies, nuts and dried fruits you have in the pantry.
Now you have a light, healthy, crunchy salad!
