Spicy Breakfast Casserole
4-6 slices wheat bread buttered, no crusts
1 cup Monterey Jack cheese, grated
1 cup cheddar cheese, grated
1 lb mild sausage, cooked
1 (4 oz) can diced green chiles, drained
2 t. diced jalapeno
9 large eggs (or 7 xl eggs)
1 c. milk
1 t. salt
1 t. oregano
1/2 t. paprika
1/4 t. garlic powder
1 t. prepared mustard
dash of fresh ground pepper
Grease 9 x 13 casserole dish
Place bread butter side down in 9 x 13 pan (use 4-6 slices)
Cover with jack cheese. Sprinkle sausage over cheese. Cover with cheddar cheese.
Sprinkle green chiles over cheese.
Combine eggs, milk and remaining ingredients. Mix well. Pour over mixture in pan.
Bake 325º for 50-60 minutes until firm.
**This can be prepared the night before and baked in the morning.
This is our favorite breakfast to serve when we have a crowd (Christmas, New Years Day.) Prepare it the night before and bake it in the morning.
