Coconut and Spinach Lentil Soup

Ingredients

1/2 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1 pound fresh spinach, chopped
2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon cumin
1 teaspoon mustard seeds
1 teaspoon garam masala
1/2 cup coconut milk

Preparation

Boil the water.

Add salt, lentils, turmeric, chili powder, and then turn heat down to med/low.

While the lentils are cooking, saute the onion in the olive oil, cumin, and mustard seeds until the onion is transparent.

Add the onions and spices to the lentils and let simmer for 5min

Add the chopped spinach to the lentils.

Simmer lentils until soft, then add the garam masala and coconut milk. Serve.
