Mom's Apple Loaf

Ingredients

2 1/4 cup Spelt Flour
1/2 teaspoon Baking Powder
1 teaspoon Baking Soda
3/4 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Ground Ginger
1/4 teaspoon Nutmeg
1/4 cup + 2 tablespoons Coconut Oil, refined
2 tablespoons Chia Seeds
1 cup packed Brown Sugar
2 tablespoon Maple Syrup
1/2 large Apple, chopped
1/2 cup unsweetened applesauce
10 tablespoons Water

Preparation

Prepare your pan by greasing it with coconut oil

Preheat oven to 350 degrees.

In a large bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, ginger and nutmeg. Set aside.

In another large bowl, whisk together the chia seeds, brown sugar, maple syrup, coconut oil, water, applesauce and apple. Add wet ingredients to dry and mix until just combined.

Scrape batter into a greased loaf pan and bake for 50 minutes or until a toothpick comes out clean. Let loaf cool completely before removing from pan.
