Broccoli And Cheese Soup
Ingredients
2 Large onions,chopped
2
Garlic
Cloves,peeled,crushed
3 cups
broccoli
florets
3 cups
vegetable stock
1 cup
fresh
milk
1/2 cup
grated
mozzarella cheese
1/4 cup
fresh
cream
2 tablespoons
butter
salt
and
pepper
to taste
chopped
coriander
to garnish
Preparation
1
Heat
butter and
stir fry
onions until pale golden
color.

Add broccoli and garlic and
stir fry
for few minutes.

Then add the vegetable stock.

Cover and
simmer
until the vegetables are soft.

Liquidise the soup,season with
salt
and pepper and pour into a cleanpan.

Add fresh milk and continue heating,but do not allow to boil.

Stir
in the grated mozzarella cheese gently and allow to
melt.

Serve
hot in bowls with a swirl of fresh
cream
and
garnished
with coriander.
