Christmas Prime Rib

Ingredients

Prime Rib
7 pounds Prime Rib
Salt / Pepper to Taste
Gravy
2 sliced onions
2 tbl butter
1 cup sherry
Beef stock
Pan drippings
2 tbl flower

Preparation

Prime Rib

Pre-heat oven to 350 degrees

Rub roast with salt and pepper

Insert oven proof meat thermometer

Cook roast until thermometer reaches 160 degrees for a medium done.

Gravy

Melt butter in low fire

Add onions and caramelize until soft and sweet

Add pan drippings and stock

Add Sherry and bring to a boil

Add Flour to thicken gravy

About

This Christmas I decided to attempt making a prime rib breaking with the Mexican tradition of eating turkey for Christmas. The caramelized onion and sherry gravy added a unique flavor to the roast
