Braised Rice

Ingredients

1/4 cup butter or margarine
1 lrg onion diced
3 cups uncooked long-grain rice
3 ounces can chicken broth - (14 ½ ea)
1/2 teaspoon salt
1/2 teaspoon freshly-ground black pepper

Preparation

Melt butter in an ovenproof skillet; add oion and saute until tender. Add rice, broth, salt and pepper, bring to a boil. Remove from heat.

Bake, covered at 350 for 20 minutes or until broth is absorbed and rice is tender. Stir with a fork and serve.
